בשרשראות פפטידיות סמוכות. כתוצאה נוצר מבנה צפוף וקשיח והשרשראות המולקולריות נוטות להיכרך זו סביב זו וליצור סיבים. מבנה צפוף זה הופך את החלבון לבלתי ניתן לעיכול משום שהקשרים אינם חשופים לאנזימים במערכת העיכול. &lt;br /&gt;
קשרי מימן עלולים להיפגע עקב ספיחת מים של הקרטין ובנוסף הם מסוגלים להישבר במקרים של מגע עם תמיסות מרוכזות של מלחים מסוימים. &lt;br /&gt;
