The beta-roll motif in this protein sets up a line of amino acids capable of hydrogen-bonding water molecules. The distance between these amino acids in the <scene name='10/1080037/Ice-binding_site/1'>Ice-binding site</scene> is spaced in such a way that these hydrogen bonds disrupt the formation of ice.
