Function
Trehalulose synthase (THS) converts sucrose to trehalulose (TH)[1].
Relevance
Since TH is a sugar substitute and is absorbed more slowly than sucrose it can be used in diabetic and sports food and drinks[2].
Structural highlights
THS binds sucrose in a deep pocket with mostly conserved residues[3].
