FunctionTrehalulose synthase or sucrose isomerase (THS) converts sucrose to trehalulose (TH)[1]. RelevanceSince TH is a sugar substitute and is absorbed more slowly than sucrose it can be used in diabetic and sports food and drinks[2]. Structural highlightsTHS binds sucrose (water molecules are shown as red spheres) in a deep pocket with mostly conserved residues[3].
