Trypsin

Trypsin is an enzyme that breaks down protein, that is produced in the pancreas and then secreted in to the small intestines. It is a homolog of chymotrypsin and it works by cleaving at the peptide bond after residues with long, positively charged side chains. An aspartate residue which attracts and stabilizes a positively charged arginine or lysine residue in the substrate. The disease of cystic fibrosis is the result of deficiency in transport of trypsin and other digestive enzymes from the pancreas.
